Separating animal fat from waste vegetable oil after pan-frying meats is useful if you want to reserve fats for later uses. Animal fat used in place of shortening when you make baked goods adds distinctive flavor. When cooking, you can use animal fat for pan-frying or as a base for country gravy. Since animal fat is a saturated fat, and vegetable oil is an unsaturated fat, separating the two after cooking is an easy process that only requires time and a few basic kitchen utensils. Instructions
1. Pour the animal fat and waste vegetable oil into a large container while the mixture is still warm.
2. Allow the mixture to cool to room temperature. Once it has reached room temperature, the saturated animal fat will form a semi-solid surface layer, and the unsaturated vegetable oil will remain liquid.
3. Skim the hardened animal fat from the top with a spoon and reserve in a covered container.
4. Discard the waste vegetable oil.
